Blueberry Muffins

Ingredients:

1 + 1/2 cups plain flour

2/4 cup sugar

1/4 cup brown sugar

Pinch of salt

2 tsp baking powder

1/3 cup oil (e.g. sunflower oil)

1 egg

1/3 cup milk

1 + 1/2 tsp vanilla

6-8 oz blueberries

2 tbsp demerara sugar


Method:

1) Preheat the oven to 180°c

2) Whisk the flour, sugars, salt and baking powder together

3) In a separate bowl/jug add the oil, egg, milk and vanilla

4) Gradually add the liquid mix to the dry ingredients whilst whisking to avoid any lumps

5) Then gently fold in the 3/4 of the blueberries

6) Add into muffin cases (about heaped 2 tbsp per muffin). Then place the left over 1/4 of blueberries on the top of the muffins.

7) Sprinkle the demerara sugar on top of the muffins

8) Bake for 15-20 mins
