Inspired by Marks & Spencers Colin the Caterpillars!!!
Makes 20 cupcakes:
Ingredients:
Chocolate Cupcakes:
8 oz butter / margarine
8 oz caster sugar
2 tsp vanilla extract
4 eggs
7 oz self raising flour
1.5 oz cocoa powder
3 tbsp milk
Chocolate Ganache:
170g double cream
130g milk chocolate
Vanilla Buttercream:
250g butter
650g icing sugar
2 tsp vanilla extract
2 tbsp milk
Decorations:
25g melted milk chocolate
1 bag colin the caterpillar chocolate faces (20 faces in total)
Method:
Chocolate Cupcakes:
Preheat oven to 180°C
1) Cream the butter and sugar together until creamy
2) Add in the vanilla extract
3) Add in the eggs one at a time each with 1/4 of the flour - mixing in between
4) Add the cocoa powder and mix until combined
5) Mix in the milk until combined and has a smooth consistency
6) Add about 1 tbsp and a half to each cupcake case (cases should be about half full)
7) Bake for 18 minutes , or until you can poke cocktail stick in the centre and it comes out clean
8) Allow to cool
Chocolate Ganache:
1) Add the cream into a pan and heat on a medium heat until it starts to bubble
2) Chop the chocolate into small chunks and place in a bowl
3) Pour the hot cream over the chocolate and leave for 30 seconds
4) Whisk the mix together until it's a smooth and creamy consistency
5) Cover in clingfilm and chill in the fridge until a firmer (nutella like) consistency
Vanilla Buttercream:
1) Add the butter to a bowl and mix it on a medium speed until its a lighter colour and creamy (using a hand or stand mixer is recommended)
2) Add in the icing sugar in small amounts until all is used - use a slower speed to avoid a mess
3) Mix in the vanilla and milk until smooth and creamy
4) Add into a piping bag (I used a star nozzle) ready for decorating
Decorating the cupcakes:
1) Using a small sharp knife, cut a small cone/well out of the centre of each of the cupcakes (this is for your filling)
2) Add in about 1 tsp of ganache to the centre / until the well is full but not over flowing
3) Pipe your cupcakes by starting in the centre and going round in a circle creating a rosette shape
4) Drizzle on a small bit of melted chocolate - and any extra sprinkles if you want
5) Place on your colin head in the centre
