Giant Gooey chocolate chip cookie

Ingredients:

200g butter

175g brown sugar

75g caster sugar

1tsp vanilla extract

2 egg yolks

275g plain flour

Pinch of salt

1tsp baking powder

150g chocolate chips

1/2 a bar of milk chocolate squares

Extra butter for greasing the tin


Method:

1) Pre-heat the oven to 180°C

2) Mix the butter, brown sugar and 75g until all combined (I recommend using a hand/stand mixer)

3) Add the vanilla and egg yolks and mix again

4) Fold in the flour, salt, baking powder and chocolate chips making sure all ingredients are combined

5) Add half of the mixture into the greased tin then evenly distribute the chocolate bar pieces on top

6) Add the rest of the mix on top, make sure to spread out to all the edges.

7) Bake for 20 mins

8) Allow to cool slightly then serve and enjoy



Tips:

  • I used a fluted pie tin with a pop up base as it's much easier to remove the cookie after and gives a nice shape.

  • I like to put the cookie tin on a baking tray as it's much easier to remove from the oven.
