Ingredients:
115g self raising flour
25g caster sugar
100ml milk
1 egg
Additional toppings (fruit...)
Method:
1) Preheat non-stick frying pan on a medium to high heat
2) Mix the self raising flour and sugar in a bowl
3) Combine the milk and egg in another bowl/jug
4) Slowly add the milk mixture with the dry ingredients whilst thoroughly mixing with a whisk until all ingredients are combined and there are no lumps
5) If your pan isn't a non-stick pan then add a small amount of butter with and spread evenly across the pan
Add little circles of the mixture on your pan (about a 3/4 tbsp) and wait until bubbles start to form on top
6) Once the bubbles are popping on top of a pancake, carefully flip over to cook the other side
7) After another minute or two re flip the pancake to make sure both sides are golden brown
8) Stack with whichever toppings you like (I recommend nutella and strawberries/bananas) and enjoy
Tips:
I recommend using a whisk to combine the ingredients to avoid lumps and minimise equipment
Make sure there are no lumps in the mixture!
This mixture should be slightly thick so the pancakes don't spread
Equipment for this recipe I recommend:
Non-stick crepe pan (around 28cm) - the one I use in currently unavailable to buy so I'm looking for an alternative to recommend
